Description

Delicious baked goods for the whole family. The dough is yeast-based but doesn’t need rising, which saves a lot of time. The pies are two-bite size, which is perfect for a buffet or small eaters. The way the dough is divided is a little unusual, but it really speeds up shaping—with a bit of practice you’ll get fast and pretty results. The filling can be anything: mashed potato (mashed with onion, with sautéed mushrooms, or with boiled minced meat), you can make them with onion and egg, or with a sweet cottage cheese filling. One rule—the filling must be thick and not runny. Not a recipe, a miracle! At our house these pies disappear like sunflower seeds—give them a try. The baking is done. Serve at the table.

    Prepare all the ingredients.

    Melt the butter and add the milk; the mixture should be warm. Add the yeast and sugar. Leave for 5 minutes.

    Then add salt and sifted flour in batches.

    Mix with a spoon. Once the dough comes together into a ball, continue kneading by hand. The dough is ready! No rising required.

    For the filling I’m using mashed potatoes, but you can make the pies with any other filling. The filling should be thick; a sweet one works too, such as cottage cheese.

    Divide the dough into 3 pieces.

    Roll out each piece into a rectangle. In the original recipe, the author suggests rolling it into a sheet measuring 50 by 30 cm. Honestly, I didn’t measure what size I ended up with.

    Spread the filling along the long side.

    Roll into a log and pinch the edges closed. You can pinch the seam shut as well. Dust your hand with flour and, with a twisting motion, tear off a piece of dough so you get a pastry. With a little practice, by the second or third one you’ll be doing it quickly and without effort. The pastry edges seal on their own. You can pinch the ends lightly for a prettier look.

    Place the shaped pieces on a baking sheet. You can leave it ungreased; I brushed mine with egg yolk.

    Bake in an oven preheated to 180°C for 25–30 minutes or until golden brown.
