
Pies with fresh currants
Description
The recipe won't take much time. For making pies with fresh currants, you can use either black or red berries; sometimes I also add raspberries or strawberries. Use low-fat cottage cheese to make the filling light—mine is usually 9% fat. Similar pies can be made with apples or other fruits. Serve warm or chilled. Perfect with tea.

Rub half of the sugar with the butter, add vanilla sugar.

Add one egg and mix well with a mixer.

Add the flour and baking powder, knead the dough. Grease the pan, place the dough in it and form the edges.

Now for the filling: mash the yolks (without the whites) with the remaining sugar.

Add the cottage cheese, starch, and yolks, then beat everything with a mixer. Separately, beat the egg whites with a pinch of salt into a foam. Gently combine everything.

Carefully spread the mixture onto the dough. Blend the berries with sugar.

Cover the pie with fruit puree on top. Place in a preheated oven at 180°C for exactly one hour.
