
Pies with cinnamon and jam filling
Description
The dish is prepared without unnecessary complications. Instead of the fillings listed in the recipe, you can choose an alternative option: 9 tablespoons of chocolate chips, 9 tablespoons of Nutella or another chocolate-hazelnut spread, or 9 tablespoons of caramel. The ready dessert can be served.

1. To make the cinnamon filling, mix together cinnamon, sugar, and flour. To make the jam filling, combine starch with water. Place jam and the starch mixture into a small saucepan. Bring the mixture to a boil and cook, stirring, for 2 minutes. Remove from heat and let cool.

2. Prepare the dough. Mix together flour, sugar, and salt. Add butter cut into pieces and blend with a pastry cutter or in a food processor. Transfer the mixture to a large bowl. Beat 1 egg and milk in a bowl, add to the flour mixture, and stir until smooth.

3. Divide the dough in half. You can proceed with baking the cookies immediately, or wrap each half in plastic wrap and refrigerate for up to 2 days. In that case, let the dough come to room temperature for 15–30 minutes before baking.

4. Roll out each half into a 22x30 cm rectangle, 3 mm thick, on a floured surface. Cut each rectangle into 9 smaller rectangles. Beat an egg and brush the surface of the dough.

5. Place the filling in the center of each rectangle with a spoon, leaving a 1 cm border around the edges.

6. Place the rectangles cut from the second piece of dough on top. Seal the edges and prick with a fork. Place the pies onto a baking sheet lined with parchment paper.

7. Bake in the oven for 30 minutes at 175 degrees until golden brown.
