
Pies with shrimp and sausage
Description
Perfectly pairs with tea and coffee. These unusual fluffy buns with shrimp and sausage filling make an excellent savory pastry. Instead of vermouth or wine, you can use white wine vinegar. Serve with tea or coffee.

1. Cut the potatoes and sausage into cubes. Slice the leek. Mince the garlic. Remove corn kernels from the cob. Preheat the oven to 200 degrees Celsius. Roll out the dough on a floured surface into a 30 cm circle. Cut out four 12 cm circles from the dough. Place them on a baking sheet lined with parchment paper and bake until golden, about 15 minutes. Let cool. This step can be done one day ahead. Seal the dough airtight and store at room temperature.

2. Preheat the oven to 200 degrees Celsius. Whisk cream and flour in a bowl.

3. Melt the butter in a large skillet over medium heat. Add the leek and cook until tender, about 10 minutes.

4. Add sausage, corn, and garlic, and fry for about 4 minutes.

5. Add vermouth and cook until the liquid has evaporated, about 3 minutes. Add the mollusk juice and thyme. Bring to a simmer over low heat.

6. Add the potatoes and cook until tender, about 6 minutes. Add the flour mixture to the skillet, stirring constantly. Cook until the sauce thickens and comes to a boil, about 3 minutes. Reduce the heat.

8. Divide the filling among four baking ramekins. Top with circles of dough. Bake until bubbles form, about 5 minutes.
