
Rooster-shaped pie
Description
The pastry is simple and quick to prepare. For a vibrant cake, add pumpkin purée to the dough. The cake with pumpkin turns out bright, with a fluffy and aromatic crumb. You can change the filling to your taste. Grate an apple, add cinnamon and sugar, or use boiled meat with green onions and egg. During fasting, you can easily replace milk with water and 60 g of butter with 3 tablespoons of refined vegetable oil in the dough. Check out the recipe. Serve warm or chilled. Perfect with tea.

Cut out a rooster template from parchment paper.

Prepare the pumpkin puree: blend frozen or fresh pumpkin into a puree using a blender.

Dissolve the yeast in warm milk, add 1 tablespoon of flour, 1 teaspoon of sugar, and leave in a warm place until a foamy layer forms on top.

Sift the flour into a bowl, add the risen yeast, pumpkin puree, and sugar, and mix well. Add the softened butter and salt, then knead until you have a soft dough that does not stick to your hands. Knead the dough for at least 10 minutes.

Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour. I use a multicooker. Select the "Multicook" mode, temperature - 35 degrees.

After an hour, the dough doubled in size.

Divide the dough into two equal parts. Roll out one part into an oval-shaped flatbread 0.5 cm thick.

Place the pre-prepared template on top of the pancake and lightly trace the rooster shape along its edges.

Transfer the dough to a baking sheet lined with a silicone mat or parchment paper. In the center of the marked shape, spread plum jam (leaving a 1 cm border around the edges).

Cover with the second flatbread, and using a template, cut out the rooster shape with kitchen scissors or a sharp knife. Press the edges firmly together to prevent the jam from leaking. Use the scraps to shape the wing and eye. Make incisions with a sharp knife to create patterns resembling the comb, beak, wattle, and feather details on the wing and tail. Decorate the pupil with a raisin. Let it rest in a warm place for 20 minutes.

Preheat the oven to 180 degrees. Mix egg yolk with 1 tsp of water. Brush the surface of the pie with this mixture. Bake in the preheated oven for 30-35 minutes (until a toothpick comes out dry).

From the scraps, you can shape buns in the form of eggs. I didn't brush them with egg yolk so they would be paler than the pie.
