Description
Perfectly pairs with tea and coffee. This cake is a simplified version of a well-known dessert. If you don't have time for elaborate decorations and other details, you can bake this simple yet delicious cake instead. For the batter, you can use any jam, as well as mashed fresh or frozen berries to taste. Serve cooled or slightly warm.

1. Preheat the oven to 180 degrees right away. Crack the eggs into a deep bowl and add a cup of sugar and a pinch of salt. Whisk until smooth.

2. Pour in the kefir and add the baking soda. Beat again until bubbles appear.

3. Prepare the jam or, in this case, berries blended with sugar in a blender.

5. Add the flour in small portions, kneading until you get a smooth dough.

6. Transfer the finished dough into a greased heatproof baking dish or one lined with parchment paper. Place in the oven and bake for about half an hour (baking time depends on the size of the dish).

7. Let the cake cool in the pan for several minutes, then transfer it to a wire rack to cool completely. Carefully cut it into two layers with a sharp knife.

8. To prepare the cream, beat the sour cream with sugar. Optionally, add vanilla for flavor or lemon zest.

9. To make the cake layers more moist, you can soak them with a sweet syrup (simply dissolve some sugar in water) or juice, for example. Spread the cream over the cake layer.

10. Spread the remaining cream on the sides and thoroughly cover the top. That's it, our cake is ready. Let it sit for a few hours to allow it to soak in. Before serving, you can optionally decorate it as desired.
