
Pork Pie
Description
Juicy pork pie is made with shortcrust pastry, and after cooling, its base becomes crisp while the filling remains tender. You can add chopped dill, parsley, cilantro, or green onions to the filling, as well as fresh cherry tomatoes or canned ones. Sprinkle cheese on the pie about 5 minutes before it's done, so the cheesy crust has time to bake through. Serve warm or chilled. Perfect with tea.

Prepare the listed ingredients. Use pork meat with small layers of fat. Cut it into small cubes or pieces.

Heat vegetable oil in a skillet and add the pork, then season with salt. Sear for about 5–8 minutes until browned. Peel and rinse the onion, dice it finely, and add to the meat. Cook for another 3–4 minutes.

Add the ground dried paprika and mix. You can optionally add other spices or seasonings. Turn off the heat.

Put a chicken egg into a deep container, pour in vegetable oil and water. Add salt and whisk everything with a whisk for 2-3 minutes.

Add the sifted premium wheat flour and knead it in in parts.

The prepared shortcrust dough will initially be crumbly; knead it for about 4–5 minutes, then place it in a bag or cover it with plastic wrap. Chill in the refrigerator for 15–20 minutes to activate the gluten.

Then knead the dough once again and spread it over the bottom of the pan, pressing it up the sides as well. Place the fried pork filling on top of the dough.

Preheat the oven to 180 degrees. Beat the chicken egg with sour cream and pour the mixture over the filling. Place the pie in the oven on the middle rack for 35–40 minutes.

After the specified time, grate the hard cheese on a fine grater and sprinkle it over the top of the pie. Bake for another 5 minutes.

Remove the pork pie from the oven and the mold, and let it cool slightly.

Cut the pie into portions and serve with fragrant tea or warm milk.
