Pie with spinach and brynza

Description

You can make a pie with brynza and spinach from almost any dough: yeast, puff, or shortcrust. In this recipe I’m sharing a version made with “quick” puff pastry. The pie turns out quite large; you can adjust the size as you like and change the proportions accordingly.

    Prepare the ingredients.

    Pour water into the dough mixing bowl, add salt, vinegar, egg, and stir to combine.

    Add the flour and knead the dough. Knead by hand for 7–10 minutes or for 3–4 minutes with a mixer. If needed, you can add a little flour.

    Divide the dough into 2 parts. Roll one part of the dough into a sheet and spread it with margarine (or butter).

    Lay out the second layer of dough and spread margarine (or butter) over it again.

    Roll the dough into a jelly roll shape.

    Roll up the pastry roll snail-style into a spiral.

    Roll the dough out into a thin sheet again.

    Fold the dough sheet in half and make another crosswise fold.

    To make the filling, pour boiling water over the spinach.

    Heat the frying pan and add olive oil and butter. Sauté the finely chopped onion and garlic lightly in the oil.

    Put the spinach in the skillet—it should first be drained on a sieve and allowed to drip off. Lightly sauté with the spinach.

    Prepare a baking pan, grease it with butter, and dust lightly with flour.

    Divide the dough into 2 unequal parts.

    Add egg to the spinach; season with pepper and a pinch of nutmeg. You don’t need to add salt—the bryndza already contains enough.

    Roll out the larger portion of dough into a sheet, transfer it into the baking pan, then spread the spinach filling on top.

    Place cubed feta on top and sprinkle chopped parsley and cilantro over it.

    Cover with the second sheet of dough, pinch the edges, and prick the top of the pie with a fork. Bake the pie for 30–40 minutes at 200°C.

    Before serving, brush the pie with butter. Serve hot. That said, this pie is also delicious cold.

    During cooking, the brynza softened slightly and the flavors blended together—it was delicious!
