Description
Pie with burbot in the Ural style with potatoes, very simple to prepare. How to make it is described in great detail in the step‑by‑step instructions. Serve cooled or slightly warm.

Prepare the ingredients.

Add yeast, salt, and sugar to warm milk, pour in vegetable oil, and stir.

Sift the flour, knead the dough.

Cover the dough with a cloth, place it in a warm spot for 1.5 hours, and during the rise perform two foldings every 30 minutes using the “stretch and fold” method.

While the dough is rising, work on the pie filling. Clean the burbot, cut it into pieces, and place it in a colander or sieve to remove as much moisture as possible, as the fish contains a large amount of liquid.

Finely chop the onion and sauté until partially cooked, adding a tablespoon of heavy cream or butter, and season lightly with salt.

Peel and slice the potatoes.

Divide the dough into three unequal parts. One large part for the bottom of the pie, the second smaller one for the top. Keep a small piece of dough for decoration.

Roll out the largest piece of dough into a sheet, about 0.5 cm thick.

Place the dough on a baking sheet, arrange potato slices on the dough, don’t forget to lightly salt them, place onion on the potatoes, and season with pepper.

Place the pieces of fish on the onion, and lightly salt the fish as well.

Cover the pie with a layer of dough on top, carefully pinch the edges as tightly as possible so that the juice doesn’t leak during baking.

Place the dough decorations on the pie, and make one or two holes through which steam will escape during baking.

Make a “boltushka” from an egg yolk and a tablespoon of milk.

Brush the pie before baking with an egg wash. Bake at 180–200 °C for 45–60 minutes, checking the potatoes' doneness with a toothpick.
