Pie with frozen cherries and meringue

Description

Delicious baked goods for the whole family. If you like, you can replace the cherries with strawberries or black currants—it will be just as incredibly delicious! I highly recommend it; you’re sure to love it. The baking is done. Serve at the table.

    Prepare all the ingredients right away. You do not need to thaw the frozen cherries.

    Put all the flour into the blender bowl, add salt and ice-cold butter cut into pieces. Run the machine for about one minute.

    Pour the resulting fine crumbs into a large bowl and add ice-cold water.

    Knead a soft dough that does not stick to your hands. Shape the dough into a ball, wrap in plastic wrap, and put it on a refrigerator shelf for 30 minutes.

    In a saucepan, add the frozen cherries, add the sugar, set over medium heat and, stirring, wait until the sugar has completely dissolved.

    Stir in the starch and wait until the berry mixture noticeably thickens.

    Remove the saucepan with the thickened berry mixture from the heat and let it cool slightly.

    Take the dough out of the refrigerator, roll it out slightly with a rolling pin, and line a pan with baking parchment, pressing the dough in to form sides about 4 cm high. Spread the cherry filling over the dough base, smoothing it with a spoon, and bake in an oven preheated to 180°C for 35 minutes.

    Carefully separate the eggs into whites and yolks into different bowls — we won’t need the yolks for the pie.

    Beat the egg whites to stiff peaks, gradually adding confectioners’ sugar as you whip.

    Remove the pan with the base and berry layer from the oven.

    Fill a piping bag fitted with your favorite piping tip with the meringue and pipe it onto the surface of the berry layer in small dollops. Return the tart to the oven and bake for another 15–20 minutes, lowering the temperature to 150°C.
