Pie with berry filling that doesn't run

Description

Delicious baked goods for the whole family. To keep the berry filling from leaking out of the finished pie, add starch to the berries while cooking. For 400 grams of berries, 2 tablespoons of starch is quite enough — there is no need to add more. Be sure to use corn starch. You can use absolutely any berries. If the berries are frozen, like mine, they must be thawed first. The pastry is ready. Serve at the table.

    All ingredients are in front of you on the table. Take the butter out of the refrigerator and set it on the counter ahead of time so it softens.

    Thaw the frozen berries in advance and drain off any excess liquid.

    Prepare the dough. Put soft butter and sugar in a bowl.

    Rub the butter and sugar together with a spatula.

    Beat in the egg.

    Using a mixer, mix it into the butter mixture.

    Knead soft dough that does not stick to your hands. Shape it into a ball, wrap in plastic wrap, and place in the freezer for 15 minutes.

    Start with the berry filling. Put the thawed berries in a small saucepan, add sugar and starch.

    Place over medium heat and, stirring with a spatula, cook the berry mixture until it noticeably thickens.

    Remove the saucepan with the thickened berry mixture from the heat and let it cool completely — this is the filling.

    Divide the well-chilled dough into two unequal portions. Roll out the larger portion with a rolling pin into a circle and place it in a baking pan (line the pan with parchment paper first), forming sides about 3–4 cm high.

    Spread the chilled berry filling onto the dough.

    Grate the smaller portion of the chilled dough on a coarse grater and spread it over the berry filling. Place the filled pan in an oven preheated to 180°C and bake for 40 minutes.

    Cool the finished pie completely in the pan, then transfer it to a flat serving plate.
