
Athens-style apple pie
Description
Perfectly pairs with tea and coffee. This upside-down cake turns out incredibly delicious thanks to the wonderful combination of apples and light sponge batter. You won't need baking soda, yeast, or baking powder, as the cake rises very well on its own. This cake is great with tea or coffee, and the best part is you can make it even when guests are already at the door! That's why I want to share it with you. Serve cooled or slightly warm.

1. Separate the egg yolks from the egg whites, add yogurt, cottage cheese, and sugar. Whisk everything with a whisk until smooth. Add the sifted flour and mix well.

2. Salt the egg whites and beat them with a mixer until stiff peaks form. Add the egg whites to the main part of the batter and gently mix with a spatula.

3. Cut the apples in half and remove the cores. Slice them into thin strips and place them in a frying pan with butter and sugar heated until melted. Cook the apples briefly (until slightly translucent) in the boiling butter mixture.

4. Place the apples in a parchment-lined baking dish, covering the bottom completely. Pour the remaining apple syrup from the pan over the apples. Pour the batter over the apples, smooth it out slightly, and cover the top with a sheet of parchment paper to prevent the cake from burning.

5. Place the pie in a preheated oven at 200 degrees for 40 minutes.
