
Quick Apple Pie
Description
This pie is very easy to prepare, but you need to let it cool down before serving. The shortcrust pastry turns out crumbly and sweet, while the filling is juicy with a pleasant tartness—an ideal balance. If you don't have time to make the shortcrust pastry, you can use store-bought ready-made dough. Alternatively, use puff pastry, just remember to prick it with a fork in several places. Serve with tea or coffee.

Add sugar, vanilla sugar, and baking soda (activated with lemon juice) to the sifted flour. Grate the cold butter on a grater.

Chop all the ingredients with a knife, mixing them together in this way. Then add the eggs and quickly knead until smooth. Place the dough in the refrigerator for at least 30 minutes.

Peel the apples and remove the cores. Slice them thinly. Pour a liter of boiling water over them, cover, and let stand for 10 minutes. Then drain the water.

After 10 minutes in boiling water, the apples will retain their shape in the pie. Add nutmeg, cinnamon, a pinch of salt, sugar, and cornstarch to them.

Divide the dough into 2 uneven parts. Roll them out to a thickness of 4-8 mm. Place the larger part into a baking pan lined with parchment paper, and form the edges.

Place the filling, cover with the second piece of dough, and seal the edges. Prick the pie with a fork or make small cuts with a knife. Brush with beaten egg white and sprinkle with sugar.

Bake the pie at 220 degrees for 20 minutes. Then reduce the temperature to 190 degrees and bake for another 25 minutes.
