
Apple Pie with Cream Cheese
Description
The pie is somewhat reminiscent of a popular cheesecake, so it should be served only after cooling, or even better, chilled in the refrigerator for several hours. You can use red or green apples, sour or sweet ones. The creamy filling (made with cream cheese) can be made sweet if the apples are sour, or kept neutral to preserve their flavor. It can be served with tea or coffee.

1. Mix yeast, sugar, salt, and ½ cup flour in a bowl using a mixer, then set the bowl aside. Melt the butter, add the egg yolk and beat. In another container, mix the egg white and kefir. Then combine both liquids in the bowl and mix thoroughly. Add 1 teaspoon of vanilla extract and mix again. Combine the flour mixture with the kefir mixture.

2. Attach the hook attachment to the mixer and gradually add ½ cup flour, one tablespoon at a time, while mixing at low speed. Knead until the dough becomes soft and no longer sticks to the sides. Then switch the mixer to medium speed and continue kneading for another 7 minutes, or until the dough surface becomes smooth. Cover the dough with a lid and let it rise in a warm place for 2 hours.

3. Grease a round pan with butter and spread it evenly using a brush. Place the dough into the pan and shape the edges. Wash the apples, peel them, slice thinly, then mix with lemon juice and honey, and arrange in the pan.

4. Slice the marzipan into thin slices and place on top of the apple layer.

5. Mix the cream cheese with powdered sugar, the remaining vanilla extract, and lemon zest, blending everything with a blender. Pour the resulting filling over the marzipan and, rotating the pan, spread it evenly over the entire surface.

6. Leave the mold for 20 minutes, then place it in a preheated oven at 160-170 degrees for 40 minutes.
