Instructions

Step 1

1. Mix the flour with cold butter, add sugar, salt, and rub by hand or using a mixer. Add 4 tbsp of cold water. Form the mixture into a ball of dough.

Step 2

2. Place the dough in a bag and refrigerate for at least an hour. After an hour, begin shaping the crust. To do this, cover the dough on both sides with plastic wrap so it doesn't stick to the surface.

Step 3

3. First knead the dough with your hands, then roll it out with a rolling pin into a 0.5 cm thick layer. Grease a baking pan lined with parchment paper and evenly spread the dough in it, shaping the edges. Prick the dough with a fork to prevent it from puffing up. Bake in a preheated oven at 180°C for 20 minutes.

Step 4

4. Slice the apples into thin slices, mix them with sugar, pour a small amount of lemon juice over them, and add a cinnamon stick. Add water and place over heat. Boil the apples for about 5 minutes, being careful not to overcook them.

Step 5

5. Prepare the cream. Separate two egg yolks, add sugar and mix. Add 100 ml of milk and 50 g of flour. Mix thoroughly until no lumps remain. Add this mixture to 500 ml of hot milk and, stirring constantly with a whisk, cook until the mixture thickens.

Step 6

6. Pour the cream into the prepared cake base. Drain the water from the apples and let them cool. Carefully roll each apple slice and tuck it around the previous slice to make apple roses. Use them to decorate the cake.

Step 7

7. The pie is ready. If desired, you can put it in the oven for another 10 minutes and dust with powdered sugar.
