
Apple Puree Pie
Description
Delicious baked treat for the whole family. The apples in this recipe are barely noticeable, as they are pre-baked and their aroma is overpowered by honey and cinnamon. It's best to use firm, tart apples that have been sitting around unused. Serve cooled or slightly warm.

Cut the cold butter into pieces and rub it into the flour and salt until it forms fine crumbs. Add a little cold water and knead into a firm dough. With your hands, press the dough evenly onto the bottom and sides of a wide baking pan, then place it in the refrigerator while you prepare the filling. Cut the apples in half, remove the cores, place the apples cut-side down on a baking sheet, and bake in a preheated oven at 180°C for 10–15 minutes, until softened.

Scoop the flesh of the baked apples out of the skin with a spoon, mash into a puree and let it cool. Meanwhile, beat the eggs with sugar, add honey and flour. Mix in the apple puree into the filling and spread it over the base.

Bake the pie for 40-50 minutes at 180°C. Sprinkle the finished pie with cinnamon.

An open pie with apple mousse can be complemented with nuts and fresh mint and served with evening tea.
