
Simple Cherry Pie
Description
Perfect for serving with tea and coffee. The most difficult part of preparation is removing the pits from each berry, which is a labor-intensive and time-consuming process if you don't have a special tool. You can make the dough yourself, and it doesn't necessarily have to be puff pastry—shortcrust pastry works well too. You can use either frozen or fresh cherries.

Wash the cherries and remove the pits (using a toothpick, pin, or special tool).

Add sugar (depending on the sweetness of the cherries), starch, vanilla and almond extract, lemon juice, and salt to a bowl, mix well, then add the cherries.

Divide the dough into 2 equal parts, put one part in the refrigerator, and roll out the second part to fit the baking pan, including the edges.

Place the dough in the pan, add the cherry filling without liquid, and place pieces of butter on top.

Take the second portion of the dough out of the refrigerator, roll it out, place the cherries on top, and seal the edges. Put the pie in the refrigerator for 20 minutes or in the freezer for 5 minutes.

Preheat the oven to 200 degrees. Take out the pie and brush it with egg yolk, bake for 20 minutes, then reduce the temperature to 175 degrees and bake for another 30-40 minutes.

Remove the pie from the oven and let it cool for 2-3 hours. Serve the pie with cream cheese or a scoop of ice cream.
