Cherry Pie

Description

Don't be alarmed if you've never made cherry clafoutis before—the batter is supposed to be very runny. This tart can be made not only with cherries but with any other berries as well: blueberries, raspberries, or blackcurrants. If you don't have cream, substitute it with full-fat milk and add 30g of butter (if preparing the pie according to this recipe). I recommend using a solid 20 cm diameter baking dish; this way, the batter won't leak out and the pie will have an ideal height. Serve cooled or slightly warm.

    1. Mix the sugar with the sifted flour and vanilla. Add milk, cream, eggs, and yolks. Whisk the mixture with a whisk and refrigerate the batter for 1–1.5 hours.

    2. Grease the baking pan with butter and dust with flour. Place it in the refrigerator. Rinse the cherries and remove the pits. Pour half of the batter into the pan.

    3. Place the baking pan with the batter into a preheated oven at 180 degrees and bake for 5-7 minutes. Then remove from the oven, arrange cherries on top, and pour the remaining batter over them.

    4. Place in the oven for another 50 minutes at 180 degrees until done. The cake will sink after baking.
