
Cherry pie with sour cream topping
Description
Delicious pastry for the whole family. 1. Mix softened butter with half of the powdered sugar and beat until smooth. 2. Add 1 egg yolk and gradually incorporate the previously sifted flour in small portions. 3. Roll the prepared dough into a ball and refrigerate for 30–45 minutes. 4. Then roll the dough into a thin layer and transfer it into a heatproof baking dish. 5. Prick the surface all over with a fork or toothpick and place the dish into the freezer for 10–15 minutes. 6. By this time, preheat the oven. Transfer the dish directly from the freezer into the oven and bake for about 12 minutes at medium temperature. 7. Now prepare the cherries. You can use either fresh or canned cherries in this cherry pie with sour cream topping (if using canned cherries, reduce the amount of powdered sugar in the topping). Wash fresh cherries, dry them, and remove the pits. 8. In a separate bowl, whisk eggs with sour cream and the remaining powdered sugar. Once smooth, add starch and mix thoroughly. 9. Remove the baked crust from the oven. Spread the cherries evenly over it and pour the sour cream mixture on top. 10. Return the dish to the oven and bake for another 35–45 minutes. 11. Let the finished cherry pie with sour cream topping cool completely—cool for at least 2 hours before cutting into portions. However, it's sometimes hard to resist, and the pie is served still warm. Serve warm or chilled. Perfect with tea.
