
Cherry and apricot pie

Prepare the ingredients for making the pie.

Crumble the yeast into a bowl. You will need one-third as much dry yeast—that is, 7–8 grams.

Pour warm milk into the yeast.

Add melted butter. Also add salt, sugar, and vanilla sugar.

Gradually add the sifted flour.

And knead a soft, elastic dough. Cover the bowl with plastic wrap and place it in a warm place.

In one to one and a half hours, the dough will increase in size and will be ready to work with.

Take the dough out of the bowl, knead it, and divide it into two unequal parts. Roll out the larger portion into a sheet and line the baking pan with it.

Roll out the second portion of the dough as well and, using a special rolling docker or a knife, make cuts in the dough.

Prepare the cherry filling. Put the pitted cherries and a little sugar into a saucepan. Add 3–4 tablespoons of water. Bring the cherries with the sugar and water to a boil.

Dissolve the starch in a little cold water and pour it into the saucepan with the cherries. Stirring constantly, bring the cherries with the starch to a thick consistency. This will take 2–3 minutes. Then chill the cherry filling.

Spread the cherry filling onto the dough.

Add the apricots. I have jam; frozen ones will work too.

Cover the fruit with a lattice of dough.

Let the pie rest in a warm place for 20–25 minutes. Brush with egg.

Bake the pie in an oven preheated to 175–180°C for 45–50 minutes.
