Cottage Cheese Pie with Streusel

Description

At first glance, this pie seems nothing special. But as soon as you cut into it, you'll discover a moist cottage cheese filling, crunchy streusel topping, and the warm aroma of vanilla. This pie is perfect when you don't feel like making individual cottage cheese buns—it's an excellent alternative. I recommend using the streusel recipe as a topping for almost any yeast pastry.     1. Mix warm milk with sugar, dry yeast, and three tablespoons of flour, then cover and let sit at room temperature for 15 minutes. Add salt, sugar, vanilla sugar, egg, and vegetable oil, and whisk until smooth.

    2. Add half of the sifted flour and knead a sticky dough. Add slightly melted warm butter, knead the dough, then add the remaining flour.

    3. Knead a soft, elastic dough (it should not stick to your hands). Transfer the dough to a bowl greased with vegetable oil, cover with a lid, and let it rise in a warm place for 1–1.5 hours.

    4. Prepare the streusel: mix room-temperature butter with flour and sugar. Rub the mixture together with your hands and chill in the refrigerator.

    5. Mix the cottage cheese with the egg (if the cottage cheese is too dry, add two eggs). Add vanilla sugar, a pinch of salt, and sour cream, then mash the mixture with a potato masher until smooth.

    6. Roll out the dough into a 0.5 cm thick rectangle, spread the cottage cheese filling on top, and roll it up into a log. Coil the log into a spiral and transfer it into a buttered baking dish.

    7. Let it rise for 20–30 minutes, covering it with a towel. Brush the cake with lightly beaten egg and sprinkle with streusel. Bake in a preheated oven at 170–180°C for 45–50 minutes. Let the cake cool.
