
Pie with cottage cheese and condensed milk
Description
The pastry comes together easily and quickly. Note that dough made with vegetable oil doesn’t need to be chilled—you should divide and bake it as soon as possible instead. Add lime or lemon zest to the filling; it gives the pie extra flavor. Serve warm or chilled. Especially nice with tea.

Prepare the necessary ingredients.

Prepare the dough. In a bowl, whisk the eggs with the sugar.

Add vegetable oil. Mix.

Add the flour and baking powder. Start mixing the dough with a spoon. As soon as it becomes hard to stir with the spoon, knead it with your hands.

The dough gathers easily into a ball. Its consistency is soft—if you press it with your finger, it will leave an impression. Shape the dough into a round.

Divide the dough into two unequal parts.

Roll out most of it into a sheet 0.5 cm thick.

Grease a frying pan or a 26–28 cm tin with a thin layer of butter. Transfer the pastry sheet into the tin. Trim the edges with a knife to form even sides. Prick the base with a fork.

Make the filling. In a bowl, mix cottage cheese, egg, condensed milk, lime (lemon) zest, and candied peel.

Mix. Whisking isn’t necessary.

Roll out a small portion of the dough into a sheet 0.5 cm thick. Cut into strips 3.5 cm wide.

Put the cottage cheese filling in the pan lined with dough. Spread it level.

Cover the top with strips of dough. Put the prepared pie into an oven preheated to 180°C and bake for 35–40 minutes. Allow for how your oven runs.

When the time is up, remove the pie from the oven. Let it cool in the pan, then transfer it to a serving dish.
