
Tuna Pie
Description
Slice the onion. Peel and dice the potatoes. Cut the tuna into pieces. Prepare the pie crust. In a large skillet, sauté the onion and potatoes with water for about 7 minutes. Drain off the liquid. Add milk, Parmesan cheese, lemon juice, and pepper. Cook until the mixture thickens. Gently mix in the frozen vegetables and tuna. Transfer the mixture into a baking dish. On a lightly floured surface, roll out the dough into a circle 3 mm thick and 5 cm larger in diameter than the baking dish. Place the dough over the dish, trimming the edges to leave a 1 cm overhang. Make several cuts in the center. Brush with beaten egg. Bake in the oven at 200°C (390°F) for 40–45 minutes, until golden brown. Serve immediately, either warm or cooled. Perfect with tea.
