
Tomato Pie
Description
Perfect with tea and coffee. To prevent the filling from being too moist, I recommend adding a light breading using corn flour. It turns out really delicious. In addition to hard cheese, you can also add soft cheese, such as ricotta. There's plenty of room for experimentation with this recipe, especially since it's a great summer dish. Remember to serve it warm or chilled. Perfect with tea.

1. Place the sifted flour (you can use a combination of wheat, rice, whole grain, or semolina), salt, and cold butter cut into cubes into a deep bowl. Rub together until a uniform crumb forms.

2. Add a little ice water, knead into a smooth dough. Roll into a ball and place in the freezer for 15 minutes.

3. Meanwhile, you can wash and dry the tomatoes.

4. Slice them into medium-thick rounds. Turn on the oven and let it preheat to 200 degrees.

5. Roll out the dough and place it into a pan, forming the edges. Prick with a fork. Place a sheet of parchment paper on top, fill with peas or beans, and bake for about 10 minutes.
