Cheese pie with suluguni

Description

The pastry is simple and quick to prepare. You can make just a pie with suluguni, but then it will simply be khachapuri baked in the oven. That's why I try to add something else to the suluguni as a filling. For example, to make a suluguni pie, you can add spinach, frozen or fresh—it doesn't matter.

    First, prepare the dough, as it needs to chill in the refrigerator for half an hour. Mix flour, sugar, and salt, then add melted butter. Pour in water and knead a firm dough. Wrap it in plastic wrap and place it in the refrigerator. Now prepare the filling: if using frozen spinach, simply cut it into small pieces and place it on a preheated skillet with vegetable oil. Sauté for about 8–10 minutes until the moisture evaporates. Season the spinach with salt and pepper.

    Cut the suluguni and feta cheese finely, or even grate them. Wash the herbs, dry them, and chop finely.

    Divide the ready-made dough into 2 parts. Roll out one part and place it in a baking pan. Evenly spread the spinach first, then the cheese.

    I like to add more cheese, it won't make it worse. Then add the herbs on top.

    Roll out the second part of the dough and place it on top of the pie. Carefully but tightly crimp the edges. I recommend making a few small cuts to prevent the pie from puffing up.

    Bake the pie for 20 minutes in a preheated oven at 180°C. The pie should turn golden brown. Serve the finished suluguni pie with sour cream.
