Fruitcake with dried fruits

Description

Homemade pastries for tea. Pies are my weakness. I make them with various fillings—both sweet and savory. But most often I prepare pies using shortcrust pastry: it's quick and easy to make, and never gets boring. Today I'd like to share with you a recipe for a pie with dried fruits. This is a healthy and delicious pie with a perfect filling. You can easily add your favorite dried fruits to my list (or simply replace them). Also, you can add a couple of tablespoons of sugar to the crumb topping—it will make the pie even tastier. Now I'll explain in detail. Serve with tea or coffee.

Instructions

  1. 1

    Step 1

    Step 1

Take the margarine out of the refrigerator in advance so it becomes soft and can be easily creamed with sugar. Set aside 30 g of margarine for the crumb topping. Activate the baking soda with vinegar or lemon juice and add it to the creamed margarine.

  2. 2

    Step 2

    Step 2

Add the egg to the same mixture and mix well with a fork. Then gradually add the flour and knead the dough.

  3. 3

    Step 3

    Step 3

The dough should be thick and pliable. Wrap it in plastic wrap or place it in a bag and refrigerate for half an hour.

  4. 4

    Step 4

    Step 4

Next, we need to make the crumb topping for the pie: add the remaining margarine to 3-4 tablespoons of flour (heaping). Rub together with your hands until crumbly.

  5. 5

    Step 5

    Step 5

Let's move on to the filling. Slightly dry the shelled walnuts in a dry skillet to make it easier to remove the skin. While still warm, rub them between your palms to remove some of the skin. Grind the walnuts in a coffee grinder or blender into coarse crumbs, not too fine.

  6. 6

    Step 6

    Step 6

Washed and dried prunes also need to be chopped.

  7. 7

    Step 7

    Step 7

Now we'll combine the nuts and prunes, add honey, and mix well. Then I remembered the dried apricots, so I added them to the filling as well, after washing and chopping them.

  8. 8

    Step 8

    Step 8

Form the pie: place the dough into the pan, making small edges (slightly higher than the edges of the pan). Then add the filling.

  9. 9

    Step 9

    Step 9

Now we need to press the edges of the dough onto the pie using a fork. Sprinkle the pie with crumbs and place it in a preheated oven at 180 degrees for 25-30 minutes.
