
Salmon and cabbage pie
Description
Pirogi are a traditional dish of Russian cuisine, and there is nothing we don’t use to make this wonderful pastry—there are countless fillings. Today I present a recipe; the pastry is ready. Serve it at the table.

Let's make the dough. Mix flour, leavening agent, water, and vegetable oil in a deep bowl.

Knead a firm dough, wrap it in plastic wrap and put it in the refrigerator for an hour. The dough should be kneaded for about 15 minutes so that it becomes very elastic.

While the dough rests, let's work on the filling. Squeeze the cabbage so that the liquid drains completely.

Finely chop the salmon and add it to the cabbage. Add the cheese and mix everything well.

Season with salt, add all the spices and herbs, beat in the eggs and mix. The filling is ready.

Divide the dough into three parts. Roll out the first part thinly and place it in the pan so that half of the dough remains over the edge.

Roll out the second and third portions thinly, spread the filling on top. Roll the roulades and place them in the dish.

Cover the pie with a free‑edge dough, brush it with egg, and bake in a preheated 180‑degree oven for 50 minutes.
