
Mackerel and rice pie

Prepare all the ingredients. Cook the rice in advance in salted water and let it cool slightly. You can also use leftovers from yesterday's dinner.

Beat the eggs with salt.

Add mayonnaise, kefir, and baking soda. Mix well.

Then add the flour.

Mix everything until smooth.

Grease a heatproof baking dish with oil. Sprinkle the bottom and sides with flour or semolina. Pour in about 2/3 of the batter, then place the cooked rice on top. Arrange thinly sliced onion in half-rings over the rice. Season the filling with salt and pepper to taste.

Flake the canned fish with a fork or break it into small pieces. You can leave a little of the liquid to soak into the rice. Place the fish on top of the rice and pour the remaining batter over it. Sprinkle the top with sesame seeds or grated cheese, if desired. Gently shake the baking dish by hand to evenly distribute the batter, then bake in a preheated oven at 180°C for about 40 minutes.
