
Fish Pie

Prepare the necessary ingredients for the dough. Sift the flour and mix it with salt and sugar.

Melt the butter, then combine it in a deep bowl with sour cream, egg, water, and baking soda neutralized with lemon juice (1 tbsp). Sift the dry ingredients into the bowl and quickly knead a soft, elastic dough. Shape the dough into a ball, wrap it in plastic wrap, and set it aside in a cool place.

Prepare the necessary ingredients for the filling. Peel and wash the vegetables. Boil the potatoes until cooked. Remove any remaining scales from the fish, rinse it in cool water, and pat dry. Remove the bones and skin. Add the fish bones and skin to boiling water and cook to make a fish broth.

Mash the boiled potatoes into a puree and mix with chopped dill. Finely chop the onion. Cut the fish into small cubes.

Divide the dough into two parts: a larger one and a smaller one. Roll each out into a thin layer. Place the larger one into a baking pan, forming high edges.

Layer the filling. 1st layer: mashed potatoes; 2nd layer — half of the onion;

Brush the edges of the dough with lightly beaten egg, place the second layer of dough on top, and trim the edges of the pie with kitchen scissors, then press the edges together firmly. Roll out the dough scraps into a thin layer and cut out decorations of your choice.

Make 2-3 holes in the pie crust and pour 1/2 cup of fish broth through them. For a golden crust, brush the top of your pie with beaten egg yolk mixed with 1 tablespoon of water.

Place the pie in a preheated oven at 190 degrees and bake for 50–60 minutes. Remove the finished pie from the oven and cover with a towel for 15 minutes.
