
Rhubarb and raspberry pie
Description
Homemade tea pastry. If you bought raspberries, be sure to sort them, place them in a colander, and immerse it in water with the berries still inside. Then remove the colander and let the water drain completely. Even better, dry them on a paper towel. If you use frozen berries, be sure to thaw them and drain off the juice. To keep the pie from turning out soggy, add one level teaspoon of starch to the filling. If desired, the top can be sprinkled with streusel or ground nuts. Serve with tea or coffee.

Prepare all the necessary ingredients for making a rhubarb and raspberry pie.

Pour water and vegetable oil into a bowl, and add the sugar. Mix everything well.

Mix the flour with the baking powder and sift it into the bowl with the liquid ingredients. Quench the baking soda with vinegar and add it to the bowl.

Mix everything thoroughly until the dough is smooth and soft.

Wash the rhubarb and remove the outer layer, then cut it into pieces.

Place the rhubarb in a bowl, add clean dry raspberries and sugar. Mix everything gently.

Grease a 22–24 cm baking pan with vegetable oil. Spread half of the dough and raise the edges much higher. Add the filling and cover with the remaining dough. If desired, sprinkle the top with sugar.

Place in a preheated oven and bake the pie at 180 degrees for 30–35 minutes. After that, remove the pan from the oven and let it cool completely.
