
Pie with colorful bell peppers

The peppers must first be roasted. To do this, cut each pepper in half and remove the seeds and membranes. Arrange the halves on a baking sheet and drizzle with olive oil.

Roast the pepper for 10–15 minutes. During this time, the pepper skin should puff up slightly and crack.

Blend the flour with salt and oil in a blender until you have fine crumbs.

Then add olives to the mixture and chop everything once more until it resembles fine crumbs.

Add half a glass of ice water and knead the dough. Form the dough into a ball and place it in the refrigerator for half an hour.

After half an hour, roll the dough into a thin sheet and line the baking dish with it. Prick the dough all over with a fork.

Place the pepper wedges, skins removed, on the dough.

Now we’ll make the pie filling. Lightly beat the eggs with the milk and garlic, then add coarsely chopped basil leaves to the mixture.

Pour the resulting mixture over our peppers.

Finally, arrange several small mozzarella balls around the perimeter of the pie. Place the pie in an oven preheated to 180°C and bake for 25–30 minutes.

Let the finished pie cool slightly, then cut and serve. Enjoy!
