
Pie with liver, potato, and cheese
Description
You can make this liver, potato and cheese pie either for a family meal or when unexpected guests drop by. It turns out so delicious that it's simply impossible to stop eating! The pastry is made from inexpensive and readily available ingredients, yet the dish comes out quite worthy. The pie can be sprinkled with cheese on top, or with sesame seeds. The filling combination is very successful — be sure to give it a try.

Prepare all the ingredients.

Combine the flour and softened butter. Rub together with your hands until the mixture resembles crumbs.

Add kefir and salt.

Knead a soft dough. If the dough sticks heavily to your hands, you can add another 1–2 tbsp of flour. Gather the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.

Rinse the liver, pat dry, and cut into small pieces. Season with salt and dredge in flour.

Fry over medium heat until half done—only enough for a light golden crust to form on top.

Add the diced onion, salt, and ground pepper to taste. Cook for another 5 minutes.

Then add the potatoes cut into small cubes, stir, and remove from the heat.

When the filling has cooled slightly, add the grated cheese.

Take out the dough and divide it into two unequal parts.

Roll out the larger piece on a floured surface and transfer it to an oiled heatproof dish. Shape small raised edges with your hands and spread the filling on top.

Roll out the remaining dough, cover the filling with it, and pinch the edges closed carefully in any way that is convenient for you.

Brush the top with egg yolk and bake in an oven preheated to 210 °C for about 40 minutes.
