
Molasses pie
Description
The baked good is easy and quick to make. I baked the pie in a 20 cm springform pan. I added maltose rye molasses to the filling, but you can use any molasses you have on hand right now. Fresh ginger can be replaced with ground ginger — add it to taste. If you like, you can omit the cardamom. Serve with tea or coffee.

Gather all the ingredients listed.

Into a large blender bowl, pour in the flour, add cold butter, cut into pieces.

Run the appliance for about 1 minute—you’ll end up with fine flour crumbs.

Transfer the flour crumbs from the blender jar into a bowl, add the yolk of one egg, salt, and ice-cold water.

Knead a soft, smooth dough that doesn’t stick to your hands.

Line the baking dish with parchment paper. Spread the dough over the bottom, forming a pie base with sides about 4 cm high.

I have slices of white bread, dried in a toaster, that can be ground in the blender jar. The result should be breadcrumbs.

Prepare the filling for the pie. Pour the cream into a bowl and crack in an egg. Whisk these ingredients together.

Grate the peeled ginger root on a fine grater. Add the grated ginger together with ground cardamom to the egg-and-cream mixture. Stir to combine.

Add the breadcrumbs to the mixture. Mix with a whisk.

Mix everything with a whisk until you get a homogeneous mixture.

Pour the prepared molasses mixture into the pastry base. Bake the pie in an oven preheated to 180 °C for 45 minutes.
