
Nut and dried fruit pie
Description
Homemade baked goods for tea. The dried fruit pie can be varied with candied fruits or chocolate chips. By the way, I sometimes replace baking soda with baking powder—the result is excellent: the dough turns out dense yet fluffy. For making the pie with nuts and dried fruits, I used raw hazelnuts. I've made it a couple of times with walnuts, but then it's best to add prunes, as they pair wonderfully with walnuts. Serve with tea or coffee.

Take the butter (or margarine) out of the refrigerator in advance and let it soften. This will make it easier to beat with sugar. Beat the butter and sugar together with a mixer.

Break the eggs, separate the yolks from the whites. Add the yolks to the butter with sugar.

Beat well.

Add cinnamon and ginger, and mix everything again.

I recommend soaking the nuts in boiling water for about 5 minutes so that the husk can be easily removed, then chop them into small pieces with a knife. Add to the main mixture and stir with a spoon.

Also pour boiling water over the apricots and raisins; this will make the dried fruits softer. Then finely chop the apricots, but do not chop the raisins. Coat the dried fruits in a tablespoon of flour and add them to the dough.

Then add the sifted flour and unslaked baking soda, pour in the milk, and carefully but thoroughly mix everything. Beat the egg whites, which were initially separated from the yolks, into a stiff foam, and gradually add them to the batter, mixing gently from the bottom up.

You can lightly grease the baking pan with butter, then place the dough in it and smooth it out.

Bake the cake in a preheated oven at 180 degrees for about 50 minutes; check for doneness with a toothpick. If desired, you can slice the finished cake and soak it with brandy or rum. If children will be eating it, skip this step, of course.
