
Pie with minced meat and honey mushrooms
Description
It's best to use wild mushrooms for this recipe. If you don't have honey mushrooms, birch mushrooms and butter mushrooms will also work. You can use any ground meat; it tastes better if it's coarsely ground. The bake is ready. Serve at the table.

I knead the dough in a bread machine. Pour warm milk into the bread machine bowl. Add salt and sugar, butter cut into pieces, and a spoon of vegetable oil. Beat in the egg.

Add sifted flour and yeast, start the dough kneading program. You can also knead by hand, the main thing is not to overload the dough with flour.

The kneaded dough is smooth and pliable. Roll it into a ball and place it in a buttered bowl to rise. It should increase in size by at least 2.5 times.

While the dough is rising, prepare the filling. Boil the oyster mushrooms until half‑cooked. Then sauté them with onion in oil until golden brown. Cool the cooked mushrooms and chop them with a knife into pieces that are not too small. It seems to me, this way the mushrooms turn out more aromatic.

Fry the minced meat in the oil left from the mushrooms until it becomes crumbly and lightly browned. Add the broth and simmer over low heat until it evaporates.

Mix the minced meat and mushrooms with onion, season with salt and pepper a little stronger than usual. The filling for pies should always be slightly more flavorful than the regular dish. Add a spoonful of thick fresh sour cream and mix well. Cool completely before using.

Knead the risen dough and divide it into two pieces. Roll the larger one into a circle and place it on the bottom of the prepared pan. Slightly lift the edges and spread the filling in an even layer.

Roll out the second piece of dough into a circle. Score the edges with a roller into a lattice (or make cuts in a checkerboard pattern with a sharp knife). Cut out the lattice and transfer it onto the pie. Roll out the center a little more. Cut out a piece and cover the center of the pie. From the leftover dough, braid twists and decorate the pie.

Pinch the edges decoratively, brush the pie with sweetened milk and let it rest a bit. Bake in a preheated oven at 180 °C, the first 15 minutes with steam, by pouring a little more than half a cup of hot water onto the bottom. Brush the finished pie with butter and cover with a napkin.
