
Honey Cake
Description
The pastry is simple and quick to prepare. If you're lucky enough to find lavender honey, feel free to use it. If not, I recommend adding dried lavender flowers to the honey. It's the lavender that gives the filling its intoxicating aroma. This pie will win everyone over—unless, of course, they don't like honey :) The pastry is ready. Serve it at the table.

Sift the flour into a bowl and add the cold butter cut into small pieces. Mix the vinegar with water, add to the flour, and quickly knead the dough until it forms a ball. Immediately place it in the refrigerator for about 2 hours.

Take out the dough and roll it out into a sheet about 3-4 mm thick. If you see pieces of butter in the dough, then you've done everything right.

Preheat the oven to 220 degrees. Place the dough into a 22 cm diameter pan, trim the edges and prick the bottom with a fork. Sprinkle beans or peas over the dough to prevent the pie base from bubbling during baking. Bake the crust for 15 minutes.

While the base is baking, mix the honey with lavender and heat it, then let it cool for about 5 minutes. Now, strain the mixture through a sieve to remove the lavender. Add all the remaining filling ingredients to the honey and mix well.

Pour the filling into the base. Reduce the oven temperature to 180°C and bake the pie for 30-35 minutes.

After baking, let the pie stand for about 30 minutes, then it can be sliced and served.
