
Pie with mandarins, apples, and pudding
Description
The pastry is prepared simply and quickly. The pie is made easily, although it takes time. But, as they say, it’s worth it. A delicate creamy pudding layer with fragrant mandarins and apples between two crunchy, short‑crust bases. The pie fully deserves a festive table. If you don’t have store‑bought pudding, you can easily make it yourself. After all, it’s the same custard. I made my pie with half the usual amount of ingredients. Serve warm or chilled. Perfect with tea.

Put the flour into a bowl.

Add sugar and baking powder.

Grate the cold butter directly into the bowl with flour and sugar. Mix until it resembles crumbs.

Add the egg.

Knead a soft, elastic dough. Divide it into two parts. One part should be slightly smaller than the other. Wrap it in plastic film and place it in the freezer for an hour.

After that, take the dough out of the refrigerator. Place most of it into the pan, forming the sides.

Pour half the required amount of milk into a pot. Add the pudding and sugar, mixing thoroughly. Pour in the remaining milk and place the pot over the heat. While constantly stirring, bring the pudding to a thickened consistency.

Wash the apples, peel them and slice them into thin rounds. Peel the tangerines and separate them into segments. Arrange the fruit on the dough.

Place the pudding on the fruit.

Grate the second portion of the dough on a grater and spread it over the pudding.

Bake the pie in an oven preheated to 175 °C, 50–60 minutes.

Cool the finished pie well and place it in the refrigerator for several hours. Then remove it, slice it, and serve with tea.
