Instructions
- 1
Step 1

Prepare all the ingredients.
- 2
Step 2

Remove the zest from the tangerines, then peel them and separate into segments.
- 3
Step 3

In a deep bowl, combine sugar, vanilla sugar, and soft butter.
- 4
Step 4

Beat everything and add the eggs one at a time. That means add one egg, beat it, and only then crack the second, third one.
- 5
Step 5

Then add the flour, baking powder, salt, and zest.
- 6
Step 6

Mix everything until smooth. The batter should have a creamy consistency.
- 7
Step 7

Grease the baking pan with butter. Sprinkle the bottom and sides with flour or semolina. Place half of the dough into the prepared pan and smooth it out with a spatula.
- 8
Step 8

Place some mandarin segments on the dough.
- 9
Step 9

Evenly spread the second portion of the dough on top and carefully place the remaining half of the tangerine segments on it, gently pressing them into the dough.
- 10
Step 10

Bake the mandarin cake in a preheated oven at 180°C for about 50 minutes on the middle rack until golden brown. I used an 18 cm diameter pan, so the cake turns out quite tall. You can use a pan of any size—this won't affect the taste, only the height of the cake.
- 11
Step 11

The mandarin pie is ready. Optionally, you can dust it with powdered sugar.
