Description
The pastry is simple and quick to prepare. This is a very interesting, albeit quite classic recipe for a chanterelle and cheese pie. Thanks to the sauce, the filling turns out tender and not dry. Cheese with mushrooms is an excellent combination, which works especially well in this dish. Serve cooled or slightly warm.

1. First, prepare the dough. Put the flour with a pinch of salt into a deep bowl (you can use a food processor for convenience). Cut cold butter into small cubes and add it to the flour. Mash the mixture into a crumbly texture without lumps. Pour in ice-cold water and knead into a smooth dough. Wrap the dough in plastic wrap and refrigerate for about half an hour.

2. Meanwhile, prepare the filling. Heat olive oil in a skillet and sauté chopped onion. Wash the mushrooms, dry them, finely chop, and add to the skillet as well. Season with salt and pepper, and cook until done. If desired, add chopped spinach to the skillet about 5 minutes before the end of cooking.

3. While the filling is cooling slightly, roll out the dough on a floured surface.

Gradually pour in milk and add grated cheese. Season with salt and pepper to taste, and cook the sauce for a couple of minutes. Then beat the eggs in a small bowl and quickly pour them into the saucepan. Stir vigorously and immediately remove from heat. Add the mushrooms to the sauce.
