
Chicken and Bell Pepper Pie

Step 1

Pour 150 ml of water and olive oil into a saucepan, bring to a boil. Add flour, Parmesan, and 1 tsp of salt. Quickly remove the saucepan from heat and stir the dough with a wooden spoon. Let it cool slightly. Transfer the dough onto a floured work surface. Knead thoroughly for 3–4 minutes. Cover with plastic wrap and set aside.

Wash the chicken breasts, dry them, and cut into thin long strips; season with salt and pepper.

Preheat the oven to 200°C. Cut the peppers in half, remove the cores, and cut each half into 2 pieces. Place the peppers in a lightly oiled baking dish, skin side up, and roast in the oven for 6–7 minutes. Then transfer them into a plastic bag, let cool, and peel off the skin. Do not turn off the oven.

On a floured surface, roll out 2/3 of the dough into a rectangle 6 mm thick. Grease the baking pan, line it with a sheet of parchment paper, leaving the ends hanging over two sides. Arrange the dough over the bottom and sides of the pan.

Place half of the chicken pieces on the dough at the bottom of the pan, then half of the pepper pieces. Sprinkle with olives and basil leaves. Then arrange the remaining chicken and pepper on top.

Roll out the remaining dough into a rectangle slightly larger than the perimeter of the pan. Moisten the edges of the rectangle with water and cover the pie with it. Crimp the edges. Make three small holes in the center. Beat the egg with a fork and brush the pie with it. Place in the oven. After 15 minutes, reduce the oven temperature to 170°C and cover the pie with parchment paper flaps. After 50–55 minutes, increase the oven temperature to 200°C. Carefully remove the pie from the mold, return it to the oven, and bake until a crisp crust forms, about 10 minutes. Serve cold.
