
Pie with dried apricots and nuts
Description
It goes perfectly with tea and coffee. This pie is very easy to make. The dough takes only 10–15 minutes to knead; the oven does the rest for you. A pie with dried apricots and nuts goes well with tea, coffee, milk, or compote on weekdays and holidays. Cover the soft, tender pie with a microwave lid so it stays fresh for several days. Serve warm or chilled. Perfect with tea.

Prepare the ingredients for the pie.

Separate the egg yolks from the whites and put the yolks in a bowl. Add the sugar and whisk thoroughly with a whisk until pale.

Add sour cream and baking soda.

Melt the butter and add it to the dough. Finely chop the walnuts, put them in a bowl, and mix.

Add the flour and mix the dough thoroughly again.

Wash the dried apricots, chop them, add to the dough, and mix.

Place the dough in the baking pan.

Bake the pie in the oven at 175–180°C. Check doneness with a wooden skewer: when inserted into the center of the pie, it should come out clean. Bake the pie for 40–45 minutes. Baking time depends on your oven.

Beat the egg whites until you have a thick, stiff foam. Then gradually add the sugar, without stopping beating. You will get meringue.

Using a piping bag with a tip, pipe the meringue onto the pie. You can also do this with a regular spoon.
