
Pie with gooseberries and cottage cheese
Description
The recipe will not take much time. The pie turns out moderately sweet, with a pleasant tartness from the gooseberries. Any variety of gooseberry will work; cottage cheese is best if soft, but if yours is grainy, press it through a sieve or purée it in a blender. If you like, you can dust the cooled pie with powdered sugar or drizzle it with sugar icing.

Prepare all the ingredients you need for the gooseberry and cottage cheese pie. Sort through the berries, rinse them, and let them dry on a clean cloth. Take the butter out ahead of time so it becomes soft.

Put the soft butter in a bowl. Add sugar and vanilla sugar. Beat with a mixer until light and fluffy.

Add the cottage cheese and a pinch of salt to the butter.

Pour in the vegetable oil and whisk until smooth and uniform.

Crack an egg into the mixture and beat until smooth. Crack another egg and beat again.

Mix the flour with the baking powder and sift into a bowl. Mix until smooth and lump-free.

Grease the baking pan with vegetable oil. Pour the batter into the pan and submerge the prepared gooseberries in it.

Place the pan with the pie in a hot oven and bake at 180°C for 45–55 minutes, until done. Let the finished pie cool in the pan, then remove and serve.
