
Red Orange Pie
Description
The recipe won't take much time. In this pie, the blood oranges perfectly showcase their rich color. Serve the pie with caramel sauce. The baking is done. Serve at the table.

1. Chill the butter and cut it into pieces. In a food processor, mix 1 cup of flour, 2 tablespoons of sugar, baking powder, and salt. Add the cold butter and pulse several times. Add ice water and process until the mixture resembles crumbs. Turn the dough out onto a work surface, press together briefly, and shape into a disk. Wrap the dough in plastic and refrigerate for 30 minutes. On a floured work surface, roll the dough into a 27-cm circle about 6 mm thick. Transfer the dough to a sheet of parchment paper, then chill in the refrigerator for 15 minutes. Meanwhile, peel the oranges and remove the membranes. Slice 2 oranges into rounds and remove any seeds. Arrange the orange slices on a plate.

2. Divide the remaining oranges into segments and remove the white membrane. Remove the seeds.

3. Place orange slices on the dough, leaving a 5 cm border around the edges. Sprinkle with 2 tablespoons of sugar. Thinly slice the remaining 1 tablespoon of butter and place it on the oranges.

4. Fold the dough toward the center, covering most of the filling. Mix the egg yolk with 2 tablespoons of water and brush the surface of the dough. Sprinkle with 1 tablespoon of sugar. Arrange orange slices on top, leaving a 2.5 cm border around the edge. Sprinkle with the remaining 1 tablespoon of sugar. Freeze for at least 4 hours, or preferably overnight. Preheat the oven to 190°C with the rack in the center. Bake the pie directly from the freezer for 1 hour and 15 minutes, until the crust is golden brown and the filling is bubbling. Cool on a wire rack for 30 minutes, then let it cool completely before serving with caramel sauce.
