
Cinnamon Pie with Nut Topping

1. Prepare the topping. Cut the butter into 1 cm pieces. In a food processor, mix flour, sugar, and salt for 5 seconds. Add pecans and blend until the nuts are finely chopped.

2. Add the butter and mix until the mixture resembles coarse crumbs. Cover the mixture with plastic wrap and refrigerate.

3. Prepare the chocolate mixture. In a small bowl, mix sugar, cocoa, and cinnamon, then set aside. Preheat the oven to 175 degrees. Grease a 22x32 cm baking dish. If you use a metal pan, the edges of the cake will be crispy.

4. Sift flour, baking powder, baking soda, and salt together into a bowl. In another bowl, beat the butter with a mixer. Add sugar and beat. Add eggs one at a time, beating after each addition.

5. Add sour cream and vanilla extract, beat. Add the flour mixture in three additions and beat. Do not overmix!

6. Pour one-third of the batter into the prepared pan. Spread the surface of the batter with a spatula. Sprinkle half of the chocolate mixture evenly over the batter. Pour half of the remaining batter on top, then sprinkle the rest of the chocolate mixture. Finally, pour the remaining batter over the top.

7. Sprinkle with topping. Bake the cake in the center of the oven, turning the pan three times during baking, for 1 hour.

8. Let the pie cool in the pan for 30 minutes, then serve. The pie can be stored in a container at room temperature for up to 3 days.
