
Pineapple pie with canned pineapple
Description
Perfect for tea and coffee. The beauty of this cake is that it's very simple and quick to make, which is especially important when guests are expected any minute. The baking ingredients are inexpensive and easily available. We add pineapple pieces on top, not into the batter, so the cake can be served without any decorations, or, if desired, with whipped cream. Serve cooled or slightly warm.

1. Crack the eggs into a bowl, add sugar, and whisk. Pour in the kefir, then add the flour sifted through a sieve, baking powder, and mix until no lumps remain.

2. The finished dough should be slightly runny, with the consistency of thick sour cream. Let the dough rest for 20–30 minutes.

3. Before baking, whisk the dough once again with a whisk and pour it into a previously greased pan. You can use any pineapple, in this case, rings. Cut each ring in half. Place the fruit halves on top of the batter.

4. Bake the pie in a preheated oven at 180 degrees for 45-50 minutes, until a golden crust forms.
