
Strawberry and Rhubarb Pie
Description
Perfectly pairs with tea and coffee. During fresh strawberry and rhubarb season, be sure to make this pie and treat your family. The amount of sugar depends on your taste. Add half the amount at first, then adjust to taste. You can use either yeast dough or yeast-free dough; the latter will make the pie more crumbly. I used a baking pan measuring 14 by 20 centimeters. Serve warm or chilled. Ideal with tea.

Prepare all the necessary ingredients for making the strawberry and rhubarb pie. Sort the strawberries and thaw the yeast-raised puff pastry.

Peel the rhubarb from the top layer.

Rinse the strawberries and rhubarb and let all the water drain off completely.

Cut the rhubarb crosswise into pieces and place in a heavy-bottomed saucepan.

Remove the green part from the strawberries and cut them into slices. Place the berries on top of the rhubarb.

Mix the sugar with the starch and pour into a saucepan.

Mix everything and let it stand for 10 minutes to release the juice.

Place the saucepan over low heat and cook, stirring, until thickened. Let the filling cool.

Sprinkle the table with flour and roll out the dough. Place it into a baking pan, form the edges, and trim off the excess. We will need the leftovers later.

Tuck in the empty edges, and use the leftover dough to make decorations, placing them on top of the pie. Mix the egg yolk with water and brush the surface. Cover the pie and let it rest in a warm place for 10 minutes.
