
Almond and Clementine Cake
Description
The pastry is simple and quick to prepare. Clementines are a cross between a Mediterranean tangerine and a sour orange. They look like tangerines, but are sweeter. This pie is made without adding flour. Serve warm or chilled. Perfect with tea.

1. Place the clementines in a saucepan with cold water, enough to cover them, bring to a boil and simmer for 2 hours. Drain the water.

2. When the fruits have cooled, cut each clementine in half and remove the seeds.

3. Then finely chop the peel and place everything together in a food processor to grind.

4. Preheat the oven to 190 degrees. Grease a cake pan and line it with parchment paper. Beat the eggs in a large bowl. Add sugar, ground almonds, and baking powder. Mix well, then add the chopped clementines. Pour the mixture into the prepared pan and bake for 30–50 minutes. If the cake browns too quickly after about 20–30 minutes, cover it with foil. Remove the cake from the oven and let it cool in the pan. Then transfer it out of the pan and dust with powdered sugar. You can also make a glaze using powdered sugar and clementine juice (1 tablespoon). The cake is best served on the second day, when it becomes moister.
