Prepare the ingredients for the dough and filling. Let's get started!

Dissolve yeast, sugar, and salt in warm water.

Add most of the flour, start mixing the dough with a spoon, and gradually pour in the vegetable oil during the process.

Knead the dough into a ball; it should not be too dense. Cover the bowl with a dry towel and place in a warm spot for 1 hour. I put it in an oven preheated to 50 degrees, then turn off the heat and close the oven door.

After an hour, the dough will increase in size by 2-3 times. It will be airy and light! Press it down with your hands. Divide it into 2 parts, one slightly larger and the other smaller.

Prepare the filling. Peel the onion and slice it into thin half-rings. Peel the potatoes and slice them thinly using a special knife. Season the potatoes with salt, pepper, add granulated garlic, smoked paprika, vegetable oil, and mix well.

Grease the baking sheet with vegetable oil. Roll out the larger part of the dough to form small edges.

Spread the onion over the dough and season with salt.

Arrange the potato slices overlapping in 2-3 layers.

Roll out the smaller portion of the dough. Roll over it a few times with a decorative pastry cutter. Transfer the dough onto the pie, trim off the excess. Crimp the edges. Let the pie rest for 15 minutes under a towel.

Preheat the oven to 200 degrees. Whether or not to brush the pie is up to you; sometimes I don't brush it at all, but possible options are: yolk, egg white, or milk. Today I brushed it with yolk and put the pie in the oven for 45 minutes.
