
Potato and Herb Pie
Description
I suggest making a delicious pie. For the filling of the pastries, you need to boil the potatoes in advance and prepare mashed potatoes with herbs and spices. Herbs and spices can be added to your liking. The yogurt listed in the ingredients can be replaced with kefir or soured milk. For the dough I use olive oil. Make this pie—it’s convenient to break it into individual pastries and take them to work, to school for the kids, or on a picnic. It can be served with tea or coffee.

In warm milk, dissolve the sugar, yeast and a spoonful of flour. Stir and let sit for 10 minutes.

Add melted butter, egg white, and yogurt. Mix.

Add the sifted flour with salt – 2 cups and mix.

Pour in the vegetable oil and knead the dough right on the table, adding the remaining flour as needed (as much as the dough takes).

Return the dough to the bowl, cover it with plastic wrap, and place it in a warm spot for 1–1.5 hours.

And meanwhile we prepare the filling. Boil the potatoes until tender. From the boiled potatoes make a puree with butter, pepper, dill, and parsley.

When the dough rises, you need to knead it and divide it into 8 parts.

From each part we form a flatbread, and we place the filling on each one.

Gather the edges of the flatbread upward.

Grease the baking pan with butter and place the buns seam side down. Put them in a warm place for about 40 minutes.

When the pie expands in size, brush it with a mixture of water and egg yolk. Sprinkle with sesame.

Bake the pie for 35–45 minutes at 180 °C.
