
Potato Pie
Description
The recipe won't take much time. A beautiful pie doesn't mean expensive or long. With the simplest set of ingredients that are in every refrigerator and two hours of free time, you get a wonderful pie. I will teach you how to make it, explain in detail and show every step. Don't be intimidated by the large number of steps in the recipe; in fact, everything is simple and accessible. The dough recipe is universal; it works for pies with both sweet and savory fillings. The main thing is not to use overly wet fillings so that it bakes through; with potatoes there are no problems in this regard! So, shall we begin? The baking is ready. Serve at the table.

Prepare the ingredients for the dough and the filling; we’ll prepare them simultaneously. Let’s get started!

Dissolve the salt, sugar, and yeast in warm milk.

Add vegetable oil, egg, flour, and knead the dough.

Cover the finished bun with plastic wrap or a towel, and place it in a warm, draft‑free spot for 1 hour.

Peel the potatoes, cover them with cold water just enough to cover, salt and bring to a boil. Cook for 30 minutes until done.

Drain all the liquid from the cooked potatoes; it won’t be needed. Add the egg white (I set aside the yolk for greasing the pie) and butter (15 g). Mash with a potato masher into a puree and season with salt; if desired, add ground black pepper.

Add chopped dill to the slightly cooled potatoes and mix. The filling is ready!

Meanwhile, the dough has already risen well, doubling in size. Punch it down.

Divide the dough into three equal parts. Roll them into balls.

On the work surface, roll out one portion of the dough into a circle; the diameter doesn’t matter, I like thin layers, but thick ones are also tasty. Transfer the circle onto a baking sheet and smooth it out.

Divide the potato filling into 2 equal parts. Apply one part to the dough using a spoon; it's very convenient to smooth it with the back side.

Roll out the second circle of dough on the table. Cover the potatoes with it.

Distribute the second half of the potatoes over the dough.

Roll out the third circle, cover the potatoes. Pinch the edge or leave it as is, the potato filling will stay inside after baking anyway. Place a small cup in the center.

Make 8 cuts with a sharp knife straight from the glass to the very edge. Then step back 2 cm and make another 8 cuts within the sectors to the edge.

Now remove the cup. You will see 8 sectors with small cuts inside. Grab the edges and flip the strips of dough outward twice. Repeat this maneuver with each sector of the pie. Cover the dough with a napkin and let it rest for 20 minutes. Meanwhile, turn on the oven and preheat to 180 degrees.

Brush the top of the pie with egg yolk. Place it in the oven on the middle rack, bake for 30 minutes.

The handsome pie is ready! Spread the remaining piece (15 grams) of butter over it. Cool for about 15 minutes on the baking sheet, then transfer to a rack until completely cooled.
